Phoenix Hops

Phoenix hops are a very unique variety developed by Wye College in England. Pine, floral, and spice are the most common descriptors for Phoenix. But many brewers also report notes of dark chocolate and molasses.

Phoenix hops were bred from a high alpha variety, so they work well as a bittering hop, but mostly they are used in classic English ales or darker styles like porters and stouts to try and capture those dark, roasty elements.
